Strawberry Crunch cones are a spinoff of the classic strawberry shortcake ice cream bars. They’re a waffle cone filled with a no bake cheesecake filling, fresh strawberry glaze, and fresh diced strawberries. The waffle cone is covered in white chocolate and a strawberry crunch topping. They’re oh so delicious and easy to make, there are just a few steps involved in the process and it’s so worth all the steps!

The Strawberry cheesecake crunch cones recipe does have several steps involved, but all of them are easy and can be made ahead of time. How to Make No Bake Cheesecake

For these strawberry crunch cheesecake stuffed waffle cones I cheated and used the already made cheesecake filling, but I do have a recipe for a no bake cheesecake filling on my Easter Cheesecake Cones. The cheesecake filling can be made a day in advance, but I used the Philadelphia No Bake Cheesecake Filling which I get at my local Walmart.

No Bake Cheesecake FillingRecipe Here or use a premade kinda. Cool and creamy cheesecake filling is the base of the cheesecake cones.

Waffle Cones – Used to hold the cheesecake and strawberry goodness.

Strawberry Crunch Topping – Used to garnish the cheesecake cones. Recipe Here.

White Chocolate – Added flavor and used to hold the strawberry crunch topping to the waffle cone.

Strawberry Glaze – Added strawberry flavor. Recipe Here.

Fresh Strawberries, diced

How to Make Strawberry Crunch Cheesecake Cones

Step 1 – Make your Strawberry Glaze per the directions in this post.

Step 2 – Make the Strawberry crunch topping per the directions in this post.

Step 3 – Gather your no-bake cheesecake filling. Either make it from scratch or use the premade kind. Recipe Here.

Now let’s assemble the strawberry crunch cheesecake cones!

Line a baking sheet with parchment paper.

Melt your white chocolate per the package directions. I do 30 seconds, stir, and then 15-second increments until fully melted. Make sure to stir well each time.

Once your chocolate is melted dip the top portion of the waffle cone into the chocolate and gently tap off any excess chocolate.

Then roll the white chocolate covered cone in the strawberry crunch topping. Make sure to coat all of the white chocolate with strawberry crunch topping.

Place on parchment-lined baking sheet and set to harden. About 10-15 mins. You can speed this process up by placing the baking sheet in the fridge for 5 mins.

Place the cheesecake filling into a Ziploc or piping bag. This makes placing it in the cone easier. Cut off the end.

Once your cones are ready, fill the cone halfway with with cheesecake filling. Add a small spoonful of strawberry glaze, and a few chunks of strawberry.

Fill the rest of the waffle cone with cheesecake filling and repeat previous steps.

Add some strawberry crunch topping to the top of the waffle cone.

Drizzle the cone with leftover melted white chocolate and add some more of the strawberry crunch over the drizzle.

Serve immediately or store in the fridge until ready to serve. Eat soon after making since the cone will get soggy from the strawberry glaze and fresh berries.

You can make all of the ingredients for the strawberry cheesecake cones ahead of time, up to 1 day in advance. Store the strawberry glaze and cheesecake filling in the fridge until ready to serve. Keep the strawberry crunch topping and waffle cones in an airtight container. These are best when eaten immediately after making otherwise the cones will get soggy within a few hours.

Can I substitute the Strawberry Glaze

Yes, You could use a premade strawberry sauce or preserve.

Can Strawberry Crunch Cones be freezen?

No, I would not recommend that.

Instructions

  1. Melt white chocolate per package directions.
  2. Dip the top part of a waffle cone into melted chocolate and tap off excess chocolate.
  3. Roll white chocolate covered waffle cone in strawberry crunch topping.
  4. Place the cone on a parchment-lined baking sheet to harden for 5-10 mins.
  5. Place cheesecake filling into a piping or Ziploc bag and cut off the end.
  6. Fill cone half way with cheesecake filling. Then add a small spoonful of strawberry glaze and a few fresh strawberry chunks.
  7. Fill cone to the top with cheesecake filling, add more strawberry glaze and more fresh strawberries. Sprinkle strawberry crunch topping on top.
  8. Place the cone on the baking sheet and drizzle with the rest of the melted chocolate. Sprinkle strawberry crunch topping over the melted chocolate.
  9. Repeat for all the cones.
  10. Chill for 10-20 minutes and serve.

I haven’t tried this yet, but a suggestion to combat the cone getting soggy, I think would be to pour and lime the inside of the cone with white chocolate and letting it harden before adding the fillings, that’s way it’s a barrier between the cone and filling.
