Today I’m sharing some more of our holiday traditions with you. We have several and I love all of them for their own reasons. One of the kids favorites is enjoying a warm cup of hot cocoa, like Stephen’s Gourmet Hot Cocoa, while we do Christmasy things like decorate the house, read Christmas stories, or watch a movie. This time of year gets really chilly in Colorado and that warm mug of hot cocoa is the perfect thing to warm you up and make you feel cozy while with your loved ones.

 

We won’t start decorating our home until the 1st of December, but that hasn’t stopped us from getting into the Christmas spirit. We’ve started pulling out our Christmas books, watching movies, and baking. When the kids came home from school I surprised them with some hot cocoa and graham cracker bark as an after school snack and they were so thrilled. When it comes to hot cocoa my kids don’t mess around. They quickly pulled out the whipped cream, sprinkles, and peppermint sticks to jazz their Stephen’s Gourmet Candy Cane Hot Cocoa.

After they got their cups of hot cocoa put together and their snack we sat down to talk about their day and warm up. They told me all the fun things they did in school that day and who they played with at lunch. It’s always fun listening to my kids tell me about their day. The littlest things make them happy like playing tag at recess, working on a new art project, or coming home to a delicious snack and warm drink. Bonus: They couldn’t stop gushing about how much they loved the candy cane hot cocoa.

Peppermint Graham Cracker Bark

While they were at school I put together a batch of Peppermint Graham Cracker Bark. It’s really easy to make and is so delicious. Preheat your oven to 350 and while that warms up you’ll want to lay about 10 full graham crackers on a lined baking sheet next to each other. In a pot you’ll add 2 sticks of butter, 1 cup of brown sugar, and 1/2tsp of salt. Whisk together as the butter melts and boil for about 4-5 minutes or until a medium thick caramel consistency is reached. You’ll want to make sure to whisk constantly so that it doesn’t burn to the bottom of your pan. Once the caramel consistency is reached you’ll pour it over the graham crackers and spread into an even layer. Place in the oven and back for about 5-7 minutes, or until edges are bubbly. Remove from the oven and sprinkle a bag of chocolate chips over the graham crackers and bake for another 2 minutes. Remove from the oven and spread chocolate into an even later with a spatula. Sprinkle with desired toppings. I went with broken up candy canes and sprinkles, but marshmallows and toffee bits also make great toppings. Let chill for a few hours and then cut into pieces.

I love peppermint bark but it can be so rich, the graham cracker is a brilliant way to cut down on some of that richness but still keep it delicious! I never would have thought of that, excited to try it!
