Mama’s Cheesy Bacon Ranch Potatoes

If you have kids then you know all about how picky they can be. I’m thankful that my kids are pretty good eaters, but even though they’re good eaters they still have a couple foods they just don’t like and it’s a struggle to get them to eat. One thing we can all agree on (and love) is bacon. Bacon is a staple in our house and it’s perfect for any meal, at any time of day. From breakfast to dinner and everything in between, bacon is a great addition to any meal.

When it comes to bacon, Farmland is my go to brand for affordability, quality, and availability. For Breakfast we enjoy bacon on the side of our main item, for lunch it’s perfect for sandwiches, and for dinner it’s added to side dishes or main meals, like my Bacon & Pea Alfredo. One of my families favorite side dishes is my cheesy bacon ranch potatoes and they’re constantly asking me to make them. They’re easy to make and are great as a side to so many dishes. With just a few ingredients you have a dish that is delicious, cheesy, and has some delicious bacon on top.

For this dish you’ll need potatoes, bacon, ranch mix, and cheese. Preheat oven to 450. I prefer to use red potatoes, but you can use whatever ones you like. I start by washing them and cutting out any eyes. I dice them up into bite size pieces and place them in a ziplock bag. Add 1 packet of ranch mix and 1/4 cup oil. Seal bag and mix until all the potatoes are coated. Line a baking sheet with foil or parchment paper and place potatoes in an even layer on the baking sheet. I sprinkle some garlic powder and pepper onto the potatoes, but this is purely optional. Bake them for 30-35 minutes, or until fork tender, brown, and crisp.

 

While the potatoes are baking I shred some colby-jack cheese and fry my bacon. I love my bacon cooked in a cast iron pan and there’s nothing like the crispness it gets. Dice up bacon and cook until crispy. Once the potatoes are done sprinkle cheese over the potatoes and then sprinkle bacon on top. Place back in the oven for a few minutes to let the cheese melt and then serve that cheesy goodness up.
