St Patrick’s Day Fluff Salad

Fluff salad or green ambrosia salad is always a hit. Creamy whipped cream, sweet fresh fruit, and mini marshmallows combine into a cool and creamy treat that kids and adults love. We’re giving it a fun twist by using only green and yellow fruit for St Patrick’s Day, but it can be enjoyed any time of year and would be good for a sports team with green and yellow/gold like the Packers.

Green and Gold Fluff Salad Ingredients

Ambrosia salad ingredients:

1 cup heavy whipping cream
¼ cup powdered sugar
1 teaspoon vanilla extract
2 cups mini marshmallows
1 (14.5-ounce) can of sliced pears, drained and chopped into small pieces
1 (10.5-ounce) can of mandarin oranges, drained
2 kiwis, peeled, sliced, and quartered
1 cup green grapes, cut in half
1 cup honeydew, cut into small cubes
1 cup pineapple tidbits, drained

How to Make Green and Gold Fluff Salad

In the bowl of a hand mixer, or stand mixer with the whisk attachment, whip the heavy whipping cream with the powdered sugar and vanilla on high speed, scraping the edges of the bowl occasionally. Whip until stiff peaks (about 2-3 minutes).

Add the marshmallows and fruit into a large bowl, then stir in the whipped cream. Mix until all ingredients are coated in the whipped cream.

Cover and chill for at least 1 hour before serving garnished with additional fruit pieces, if desired.

Tips for Making Fluff Salad

Do not overbeat the whipped cream so much that it begins to curdle. Whip just until the mixture is stiff.

The amount of fruit may be adjusted to your liking.

If you’d like your ambrosia salad to have less whipped cream and more fruit, use ½-¾ cup of heavy whipping cream instead of 1 cup. Adjust the powdered sugar and vanilla accordingly.

Try to drain the fruit as much as possible. If there’s any liquid, it will make the whipped cream watered down and “soupy”.
