Chilaquiles Recipe

There are some foods that just bring you total comfort. They’re delicious, they make you happy, and they bring you some kind of nostalgia, hence Comfort Food. Chilaquiles (pronounced chee/lah/KEE/lehs) is one of my favorite comfort foods and one I love to enjoy for breakfast, but it also can be enjoyed for any meal by switching up a few ingredients. This simple dish is packed full of flavor and can be tossed together quickly for a hot meal that’s full of crunchy, gooey, and spicy goodness.

The main star in Chilaquiles is the salsa. You can use any kind – spicy, mild, red, green, ect. My go to is Pace Salsa which happens to be on sale at your local Albertsons/Safeway store, 16 oz. varieties are 2/$4 at, during the Stock Up Sale which runs 9/30-10/13. I still remember the Pace Salsa commercial from when I was a little kid, so they’ve been a brand I’ve stuck with through the years. I always stock up on Pace when it goes on sale because it can be used for so many delicious dishes like Chilaquiles, Salsa Chicken, tacos, and much more. To make Chilaquiles you cut up tortillas into bite size pieces, lightly fry them, drown them in delicious salsa, and gooey cheese. Then depending on your mood and what meal you’re enjoying is when you decide what else to add to it. For breakfast I love Chilaquiles with eggs and for lunch and dinner I’ll eat them as is or I’ll add some shredded chicken. Garnish with sour cream and cilantro and you have yourself a delicious Mexican dish. Chilaquiles also pairs perfectly with beans, so I like to have a side of them, either whole or re-fried.

Chilaquiles Breakfast Recipe
What you’ll need:
  • 18 corn tortillas
  • 2 cups Pace Salsa
  • 1/2 cup shredded Monterey jack cheese
  • Vegetable oil for frying
  • Sour cream for garnish
  • Cilantro for garnish

What you’ll do:
  1. Pour the vegetable oil into a heavy-bottomed skillet and heat to 350 degrees.
  2. Once the oil is hot place the tortillas into the oil in batches and lightly fry. Turn them with a slotted spoon, so they don’t stick together, until golden brown, about 2 to 3 minutes. Remove the tortillas to a paper towel-lined baking pan to drain and cool and sprinkle immediately with salt.
  3. Once all tortillas are fried, drain the oil from the pan, return to heat, and add the tortillas back to the pan.
  4. Pour salsa over the tortillas and coat tortillas in the salsa.
  5. Let simmer for a minute or 2, turn off heat, and sprinkle with cheese.
  6. Eat as is or top with cooked eggs or shredded chicken. For the eggs I like to do scrambled or over easy.
  7. Garnish with sour cream and cilantro.

I love Pace Salsa, it is my favorite. I've never made chilaquiles, I want to try these! It sure looks good!
