Baking Christmas Cookies While Watching Christmas Movies!

One of my favorite things about Christmas is all of the pretty, glowing lights and the memories that I’m able to create with my growing family. One of those memories is listening to Christmas music while dancing and singing around the house with the kids and it always puts me in such a happy mood. Next is the Christmas movies, which are on every night up until Christmas on various channels. Whether it’s a family Christmas movie or a sappy romantic one, someone is bound to be watching one and I have to admit, there is nothing better this time of year than being snuggled up on the couch with a warm cozy blanket, Christmas tree lights on, fire going, a cup of hot cocoa, and a good Christmas movie on.

Christmas Cookies

I love baking cookies this time of year and there are always some fresh baked cookies on hand like these no fail sugar cookies. I’ve have some very failed sugar cookies over the years, but these are easy to do and so far I haven’t messed them up. I’m calling them a baking win.

Ingredients:

1 cup sugar
1 egg
1 teaspoon vanilla extract
3 cups flour
1½ teaspoons. baking powder
½ teaspoon salt

Instructions:

Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a large bowl using a mixer, beat butter until creamed and smooth. Add in the sugar and beat on high speed until light and fluffy, about 3 or 4 minutes. Scrape down the sides and bottom of the bowl as needed. Add the egg, and vanilla and beat on medium-high until fully combine. Scrape down the sides and bottom of the bowl as needed.
Whisk the flour, baking powder, and salt together in a medium bowl. Turn the mixer down to low and add half of the flour mix, beating until just barely combined. Add the rest of the flour and continue mixing until combined. The dough will be soft.
Lay down a silicon mat, flour, and place dough on mat. Flour top of dough and rolling pin. Gently roll out dough to ⅓-inch thickness or your desired thicnkess. The thicker the cookies the softer the cookies will be. Cut out shapes and use a spatula to transfer to prepared baking sheet.
When one cookie sheet is full refrigerate for 5 minutes and then bake for 10 minutes. (Times may vary depending on thickness. Bake until edges start to turn golden brown.)
Repeat with remaining dough.

Once cookies are cooled I cheat and color some store bought icing and let the kids decorate the cookies, since they’ll be the one enjoying them.
