Melt: Combine butter and mini marshmallows in a small microwave-safe bowl. Microwave for 10-15 seconds until marshmallows puff up. Stir until combined (it may form a ball, and that’s okay). 

Mix: Add puffed rice cereal to the bowl. Spray your hands or gloves with nonstick cooking spray and mix by hand until the cereal is evenly coated. 

Press: Transfer the sticky mixture into a lightly greased container. Press it down evenly. 

Decorate: Sprinkle rainbow jimmies on top for color. Add a dollop of whipped topping if desired. 

Cool: Let it set for 10 minutes or dig in right away if you can’t wait!

  • Nonstick Solution: Don’t skip spraying your hands or gloves with nonstick cooking spray! This makes shaping and mixing so much easier. 
  • Cooling Shortcut: If you’re in a hurry, pop your treats in the fridge for 5 minutes to help them set faster. 
  • Marshmallow Clumping: A little clumping is normal. Just mix it well, and everything will come together.

Ingredients

  • ½ Cup Puffed Rice Cereal
  • ½ Cup Mini Marshmallows
  • 1 Teaspoon Salted Butter
  • Rainbow Jimmy Sprinkles

Instructions

  1. In a small bowl, combine the butter and mini marshmallows.
  2. Microwave for 10-15 seconds, or until the marshmallows start to get big.
  3. Stir well. It might clump into a ball and that’s ok.
  4. Add the puffed rice to the bowl. Spray your hands with nonstick cooking spray (or wear gloves and spritz the gloves) and mix the ingredients by hand until the cereal is well-coated.
  5. Spritz the container with a bit of nonstick cooking spray and press the cereal and marshmallow mixture into it.
  6. Garnish with the rainbow sprinkles and a dollop of whipped topping, if desired
  7. Let sit and cool for about 10 minutes or eat immediately! Enjoy!
