Football is in full swing and weekends are spent watching games in our house. Whether we’re with the family or at home having a chill weekend, football is always on. I’m not a huge football fan, but the Hubby and kids love it so I deal with it. The one thing we can all agree on during Football season is having good food during games and there is always something BBQ’d. Just because it’s fall doesn’t mean the grilling stops. Rain, Sun, or Snow – the grill is getting used and today I’m sharing a delicious and easy to make recipe using Foster Farms Fresh & Natural Chicken and Stubb’s BBQ Sauce.

Foster Farms is my go to chicken brand since their chicken is locally raised in California, always fresh, 100% all natural, no added hormones or steroids, and is American Humane Certified. And I can conveniently find it while I’m doing my grocery shopping at Safeway. Make sure you keep an eye out because Safeway has an Instant Redeemable Coupon that can be found in-store and used instantly for the chicken and Stubb’s BBQ sauce (which is good until the end of the year). The sauce aisle is one of my favorite aisles because there are so many delicious choices, especially when it comes to BBQ sauce. I decided to give Stubb’s a try this time since their sauces look so delicious and they’re certified Gluten Free and enrolled in the Non-GMO project to have the line verified Non-GMO. Stubb’s Bar-B-Q sauces, marinades and rubs are made with quality, gluten free ingredients and are free of high-fructose corn syrup, artificial preservatives, colors, sweeteners, flavorings or MSG, giving your barbecue the authentic, Legendary Texas Flavor that Stubb was known for.

For this perfect combo of ingredients I decided to whip up a fresh and hearty BBQ chicken salad. You’ll need your Foster Farms Chicken and Stubb’s BBQ sauce, any flavor, for this recipe and you can make enough for one person or enough to feed a crowd!

What you’ll need:

  • 4 chicken thighs
  • Salt and ground black pepper, to taste
  • BBQ Seasoning
  • 6 cups chopped romaine lettuce, rinsed
  • 1 Roma tomato, diced
  • 3/4 cup canned corn kernels, drained
  • 3/4 cup canned black beans, drained and rinsed
  • 1 avocado, diced
  • 1/2 cup shredded Colby jack cheese or a cheddar Monterrey jack blend
  • 1/4 cup Ranch dressing
  • 1/4 cup BBQ sauce
  • 1/4 cup tortilla strips or crushed chips

What You’ll Do:

  1. Rinse your chicken and pat dry
  2. Season your chicken with salt, pepper, and bbq seasoning generously on both sides.
  3. Cook the chicken over medium-high heat until cooked through, flipping after about 10-12 minutes. Use a meat thermometer to make sure chicken is fully cooked.
  4. Once chicken is cooked remove from grill and let cool.
  5. Dice up chicken thighs and coat in Stubb’s BBQ Sauce.
  6. In a giant bowl mix together the lettuce, corn, black beans, tomatoes, avocado, cheese, and ranch dressing.
  7. Place BBQ chicken on top of salad mix and sprinkle tortilla strips.

I love Stubbs bbq sauce! This salad recipe looks fantastic, I still remember the first time I had a bbq chicken salad and I've never attempted to make it but now I will. Thanks for sharing!

I have never tried barbeque chicken in a salad. It looks really good! I have only ever tried regular grilled chicken or buffalo style chicken in one. I will definitely have to test this recipe out!
